Carrot soup is very healthy and delicious with mild flavor of cumin seeds and carom seeds. I love fried bread slices in the soup, gives nice crunch to the soup. It feels heavenly to have light soup like this at chill evening with some snacks. I hope all will give a try and enjoy this rainy season.
Take carrots, garlic cloves & ginger piece and peel the skin of it and chop them roughly. Keep aside.
2. Heat a pan with ghee. Add cloves, cumin seeds, carom seeds & asafetida in it.
Let it splutters. Then add roughly chopped ginger & garlic and sauté for few minutes.
3. Now add chopped carrots and sauté for 12 to 15 minutes. Then cool down and blend it with 2 cups of water.
4. In same pan pour carrot soup with required salt and brings to boil. Atlast add pepper powder and garnish it with coriander leaves. If you want add fried bread pieces into it and serve hot.
