Ingredients
  1. Carrot (medium size) – 2 nos.
  2. Coconut (grated) – 1 cup
  3. Sugar – 7 to 8 tbsp/ as required
  4. Milk – 120 ml
  5. Ghee – 2 ½ tbsp
  6. Cardamom – 2 nos.
  7. Cashew nuts – 8 to 10 nos.

Carrot burfi is easy and tasty sweet to prepare with simple ingredients available at home always. Even if you are new for cooking definitely can try without any hesitation. You can refrigerate and have for 3days but keep in an air tight container. It looks great with natural color. I am sure kids love it. I hope all will try this sweet soon!!!!

 

Preparation:

  1. Peel the skin of carrots and roughly chop it. Then take them in a blender and blend it coarsely. keep it aside.

Heat a pan with 2 tbsp of ghee.  Fry the blended carrot & grated coconuts in it until raw smell of carrot goes off and becomes soft.

3. Then add milk and cook in medium flame until mixture absorbs all the milk.

4. Once done, add sugar and keep mixing. Now mixture becomes little watery.

Add cardamom powder and keep stirring till it leaves the sides and oozes out oil.

6. Now spread the mixture into greased plate and smoothen it using spoon. Let it set for at least 30minutes. Meanwhile, fry cashew nuts in same pan and keep it aside.

 7. Then cut into pieces using knife and decorate with cashew nuts but do not take the pieces out. Now refrigerate for 1 hour and then take the pieces carefully and serve it.
