Ingredients
  1. Basmati rice – 1 cup
  2. Onion big – 1 no.
  3. Salt – To taste
  4. Green peas - ¼ cup
  5. Water/coconut milk – 1 ½ cup
To grind
  1. Coriander leaves /Cilantro– 1 bunch
  2. Green chilli – 3 nos /as required
  3. Fennel seeds – 1 tsp
  4. Ginger – 1 inch piece
  5. Garlic – 5 cloves
To temper
  1. Ghee – 1 tbsp
  2. Bay leaf – 1 no.
  3. Cinnamon – 1 small piece
  4. Cloves -1 or 2
  5. Cardamom – 1 no.
  6. Cashew nut – 10 nos.

I learned this flavorful recipe from my sister.It is simple pulao perfect for lunch box. Even you can replace basmati rice with normal rice which we use daily. I am sure kids too love its taste and nice aroma just give a try with onion raita..!!!

Preparation:

  1. Clean and soak basmati rice for 30 min. Then grind all the ingredients which is given under ‘ To grind’ with little water to a smooth paste and keep it aside.

Heat ghee in a pressure cooker and temper with items given under ‘ To temper’ in order. Now add chopped onion and fry until it gets transparent.

3. Add ground paste into it and sauté for 5 min until raw smell goes off. Then add green peas into and mix well.

4. Add soaked basmati rice & required water and mix well to get blended with masalas .

Then pressure cook for 3 whistles and switch off the flame. ( I use  1:1.5 ratio, (i.e) for 1 cup of rice I use 1 ½ cup of water. It differs according to the type of basmati rice you use) .

5. When the pressure released completely  open the lid and fiuff  the rice using fork(Careful, do not break the rice). Now Coriander pulao is ready to be served with onion raita.
